The other day I posted a link to my current favorite recipe, pannukakku, or Finnish oven pancake. I made it again today because I’m on a pannukakku kick.

Now that our new oven has a window and an oven light, I get to take time-lapse pictures of the pannukakku baking. It puffs!
I wish you could smell what it smells like while it’s baking.

It starts to deflate as soon as you take it out of the oven. Check out that texture!
Not glamorous, but just as good as most peasant foods are.
Go make some, seriously. I recommend doing the variation with 4 tablespoons of sugar and a dollop of vanilla. Baked in a big cast iron skillet, if you have one.
